In these days of health emergency, he discussed his English-language thesis in pharmaceutical sciences titled &#8220;<strong>Espresso coffee preparation: analytical study to improve the quality of the product&#8221;<\/strong> by videoconference with the committee composed of professors from other Italian universities. His supervisor throughout his doctoral program, pertaining to the scientific field of pharmaceutical chemistry, was Prof. Sauro Vittori, a professor at the University of Camerino. <\/p>\n<p>Simone Angeloni, a former Pharmacy graduate in 2016, had won at the time the competition for admission to the Unicam PhD School announced and funded by the International Hub for Coffee Research and Innovation. Unique in its specificity, the Center operates as a scientific and technological support to the development of knowledge in the coffee supply chain, increasing the strength of innovation of this important beverage appreciated worldwide. The main research of the doctoral course carried out by Simone Angeloni involved:  <\/p>\n<ul>\n<li>The development of analytical methods to quantify two classes of plant-derived molecules that exhibit estrogen-like activities, in espresso coffee, roasted beans, and green coffee;<\/li>\n<li>The study of how, some espresso coffee extraction variables can influence the espresso coffee extraction process, that is, to produce, with less coffee powder, an espresso coffee of the same quality, so as to optimize the amount of raw material used and produce less waste (coffee grounds);<\/li>\n<li>characterize all the odors (aromas) present in a coffee roasting by-product (Silverskin) for the purpose of proposing its innovative reuses in the food industry. This research was also carried out with a six-month stay in Germany, at the &#8220;<strong>Leibniz-Institute for Food Systems Biology&#8221; of the Technical University of Munich.<\/strong> <\/li>\n<\/ul>\n<p>Great satisfaction for the results achieved by Simone Angeloni with his research and for the attainment of his doctoral degree was expressed by Nando Ottavi, president of Simonelli Group, and Flavio Corradini, director of the International Hub for Coffee Research and Innovation and former rector of the<strong>University of Camerino<\/strong> during the period in which the research center was promoted and established.
